the best all around vegetarian cookbook - 




I have cooked my way through 3 copies of the book. It is my bible for creative, tasty and simple ways to cook all manner of vegetables. I am an omnivore, not a vegetarian and Madison's recipes speak to a genuine understanding of the richness of the possibilities of meatless cuisine. My very carnivorous family unfailingly praises whatever vegetable dish I have cooked based on one of Madison's recipes. People who say they loathe vegetables lap up meals I prepare from this book. Madison is the antidote to overboiled, tasteless vegetables. Madison includes much else besides recipes for vegetables such as a full section on preparing grains. My desert island choices, and in fact, my actual sailboat choices would be/are, Madison's Vegetarian Cooking for Everyone and Mark Bittman's How to Cook Everything. They are the two fundamental kitchen resources.

Great Cookbook - 




I have had this cookbook for about six months now and I love it. My husband and I usually make one or two recipes from it every week. It includes some great recipes for what to do with beans. We especially like her refried beans recipe and her guacamole recipe, which are a great combo! We have also enjoyed her pizza ideas. I would definitely recommend this cookbook to anyone who wants some good vegetarian dinners!
Great book for both the vegetarians and carnivores - 




This arrived today and I thumbed through it riveted. I can't wait to get started. I've got 2 other vegetarian cookbooks and this one beats both hands down. I love the notes in the page margins that give information about the recipes, either how to serve, what to serve with or a quick history of the ingredients.
Excellent if you don't want Vegetarian recipes that use "fake meat" - 




I am a vegetarian because I don't like meat - never have, never will. Recipes that simulate meat based recipes are completely unappealing to me. I love this book because the recipes are "real". I read a lot of the negative reviews that complained that it's not all about vegetables and *gasp* includes grains! UM - what the heck do you think real vegetarians eat? Surely it's not just veggie dogs, veggie burgers and a variety of soy based fake meat products.
This cookbook enables me to cook good food that non-vegetarians will eat as well and enjoy since I am the only one in my family and circle of friends who does not eat meat. The Lentil Minestrone is outstanding and the best I've tasted. My super picky 5 year old son loved the Lentil and caramelized onion croquettes. I have made the almond, pear upside down cake many times and have been begged for the recipe. So simple but delicious.
Yes there are some ingredients that you might not have on hand in some of the recipes but I haven't found any difficult to find yet either at our grocery store, the health food store or the local farmers market.
If you enjoy good food, like to cook and aren't afraid to try new ingredients, this is a great book. If you are looking for super simple recipes that you can make with the things you already have on hand - this book may not be for you. If you want recipes to replace the meat recipes that you love - this book is definitely not for you but then I'd question your need to be a vegetarian and how long your vegetarianism will last.

Disappointed - 




I was disappointed with this book. I am a vegetarian since I believe in the strong scientific evidence that this is the most healthful way to eat. However, I found that too many recipes required liberal amounts of oil or butter, most definitely unhealthy. Also many of the recipes required ingredients I'd never heard of and are not available in local supermarkets.
I returned the book to Amazon.
